Static firing one engine shows that the GSE is working and ready. (at least ready enough for static fires) it's a huge step!

Good question. Only SpaceX knows the answer.

I suspect they will do 2 next time, and then 4. My guess is they will do the outer ring in 5 groups of 4, but they might go to other combinations, maybe testing 10 in one session, then the other 10, then 20 at once.

This is just me guessing, but I think every engine will get at least 5 seconds of test firing before the first launch, but that they will do the largest numbers at once that are practical, to get the static fire tests over as soon as possible.
